Appalachian State University celebrated its eighth annual Research and Creative Activity at Appalachian (RECAPP) event on Sept. 18, highlighting the research, scholarship and creative endeavors of faculty and staff across the university.
Among the presenters was Beroth Professor of Marketing Dr. Pia Albinsson, who shared her research, Wiser Tables, Healthier Homes: Cultivating Consumer Wisdom, Identity, and Well-Being for Families Navigating Dietary Constraints.
“When families navigate mixed diets, voluntary choices like veganism often lead children to judge their parents' meals, whereas medical needs like allergies inspire family members to look out for one another's safety,” noted Albinsson. “To support their loved ones and keep the family connected, members without dietary restrictions frequently give up favorite foods so no one feels isolated or put at risk. Rather than cooking multiple separate dinners, households avoid stress by serving flexible, build-your-own meals, where family members can create their own plate, allowing everyone to share the same mealtime tradition together.”
Albinsson is a faculty member in the Walker College of Business’ Department of Marketing and Supply Chain Management. She also presented at RECAPP in 2025, when six Walker College faculty members showcased their research at the event, and in 2019.
